
Founded in 2015, NotCo is a Santiago, Chile-based foodtech startup that uses artificial intelligence to create plant-based alternatives for traditional animal-based foods like milk, mayonnaise, and burgers.
NotCo’s mission is to make sustainable, tasty food accessible while reducing the environmental impact of animal agriculture. Their AI engine, called “Giuseppe,” analyzes thousands of plant combinations to replicate the taste, texture, and nutrition of conventional products.
